Herbed Mango Watermelon Gazpacho!

minutesIt’s fresh, fabulous, and easy to serve.
I love serving this in individual jars, and with the finish of fresh Mango and Watermelon, it’s a real hit!
If you can’t get a hold of nice Mangoes, use Peaches!
Ingredients
(4) CUPS (4) Multi-Colored Heirloom tomatoes | I LOVE the small ones, they just have the best flavor!
(1) medium (1) Cucumber | chopped into cubes for blending
(1) clove (1) Garlic | use more if you like!
½ cup ½ filtered Water
⅓ cup ⅓ Extra Virgin Olive Oil
(2) TABLESPOONS (2) Red Wine or Apple Cider Vinegar
(1) CUP (1) Fresh Watermelon | diced
(1) CUP (1) Fresh Mango | diced
½ teaspoon ½ Fresh Lemon Juice | squeezed
½ teaspoon ½ Fresh Lime Juice | squeezed
½ cup ½ Fresh Basil | julienned (thinly sliced)
Salt and Pepper to taste
Let’s DO THIS!
- Combine in your Vitamix or Blender:
Tomatoes, Cucumber, Garlic, Water, Extra Virgin Olive Oil, and Red Wine or Apple Cider Vinegar - Add Salt and Pepper to taste
- In a separate bowl, carefully combine:
Watermelon, Mango, Lemon Juice and Basil - Salt and Pepper to taste
- PRESENTATION:
- Place blended Tomatoes and Cucumber soup into bowls or glass jars, and spoon Watermelon Mango onto the top, drizzle with Olive Oil, and garnish with a sprig of fresh Basil!
- Serve chilled!
