Considered an ancient grain and gluten-free, Millet is rich in minerals such as Calcium, Iron, Magnesium, Potassium, and Selenium, along with essential vitamins like Folate, Niacin, and Vitamins B6, C, E, and K!

Here’s my basic Millet recipe:

Ingredients

  • (1) CAN (1) Organic Coconut Milk | full fat | refrigerated overnight

  • (1) CUP (1) Millet

  • Pinch Pinch Salt

  • (3-5) CUPS (3-5) Filtered Water

  • ½ ½ Orange | sliced into wedges

  • Pinch Pinch Cinnamon

Let’s DO THIS!

  • Begin with your can of Coconut Milk!  Scrape (2) TABLESPOONS of the hardened coconut milk, and add to your saucepan on medium heat.
  • Add in your Millet, and sauté in the melted Coconut Milk for a few minutes until fragrant.
  • Add a pinch of Salt
  • Pour in (3) CUPS of Water, and bring to a boil. 
  • Drop in your Orange wedges.
  • Turn down the heat, and simmer for 20 minutes.  Stirring occasionally.
  • Add more water.
    I like my Millet really saucy (or “goopy” as my friend would say!),
  • Fold in the rest of the Coconut Milk, and add a pinch of Cinnamon.
    Warm through for a few minutes.

    Serve this with your favorite fruit, cobblers, nuts, seeds and/or toasted Coconut!

NOTES

  • Keep stirring your Millet as it simmers, as it tends to stick to the bottom of the saucepan.
