Ingredients

  • (3) TABLESPOONS (3) Olive or Avocado Oil | divided

  • 4 CUPS 4 Heirloom Cherry Tomatoes | I like to use a combination of red and yellow tomatoes! | Heirlooms are fantastic!

  • (12) cloves (12) Garlic | divided

  • (1) medium (1) Onion | I like to use white or yellow onions for this recipe

  • (1) teaspoon (1) Garlic Powder

  • (1) teaspoon (1) Onion Powder

  • (1) teaspoon (1) Himalayan Salt

  • (1) TABLESPOON (1) Coconut Sugar

  • (1) teaspoon (1) Oregano

  • (1) CUP (1) fresh Basil Leaves| I do throw in the stem, but remove before blending.

  • (1) teaspoon (1) Chili Flakes | add more if you really like it spicy!

Let’s DO THIS!

  • Preheat oven to 375ºF
  • Add (1) TABLESPOON of Oil to your pan or baking dish, and layer Tomatoes, (8) cloves of Garlic, Onion, Garlic Powder, Onion Powder, Salt, Coconut Sugar, Oregano and Basil. Drizzle more Oil over the top of Basil, sprinkle with Salt.
  • Bake for 25 minutes.
  • Remove from oven, and throw roasted ingredients into your blender (Basil leaves without stems!).
  • Heat (1) TABLESPOON Olive Oil in a skillet or Wok, and add (4) cloves of Garlic, smashed and minced, along with Chili Flakes.

    Pour in your sauce and sauté for a few minutes.
  • Pour over Zucchini “Parmesan”, use as a dipping sauce, or toss with Pasta!
