Chili Garlic Mushrooms and Spinach!

minutesWe ate WAY too much this weekend, and I wanted cook something super healthy and hearty to start the week!
Ingredients
(2) TABLESPOONS (2) Avocado or Olive Oil
(4) CUPS (4) Mushrooms | cleaned and sliced | I like to use Button Mushrooms or Baby Portobellos.
(6) CUPS (6) Fresh Spinach | cleaned
(5-8) cloves (5-8) Fresh Garlic | smashed and minced
(1) teaspoon (1) Chili Flakes | throw in more if you love it spicy!
(1-2) TABLESPOONS (1-2) Coconut Secret Coconut Aminos
Himalayan Salt and White Pepper to taste!
Let’s DO THIS!
- Heat oil in your skillet or wok over medium heat.
I used my Lodge Cast Iron Wok for this one! - Throw in your fresh Garlic and Chili Flakes.
- Add Mushrooms, and sauté for a few minutes.
- Toss in your fresh Spinach, and Coconut Aminos.
- Season with Himalayan Salt and White Pepper. Sauté for a few more minutes, until Spinach is slightly wilted.
Serve over your favorite rice or quinoa!
