Chili Garlic Mushrooms and Spinach!

We ate WAY too much this weekend, and I wanted cook something super healthy and hearty to start the week!

Ingredients

  • (2) TABLESPOONS (2) Avocado or Olive Oil

  • (4) CUPS (4) Mushrooms | cleaned and sliced | I like to use Button Mushrooms or Baby Portobellos.

  • (6) CUPS (6) Fresh Spinach | cleaned

  • (5-8) cloves (5-8) Fresh Garlic | smashed and minced

  • (1) teaspoon (1) Chili Flakes | throw in more if you love it spicy!

  • (1-2) TABLESPOONS (1-2) Coconut Secret Coconut Aminos

  • Himalayan Salt and White Pepper to taste!

Let’s DO THIS!

  • Heat oil in your skillet or wok over medium heat.
    I used my Lodge Cast Iron Wok for this one!
  • Throw in your fresh Garlic and Chili Flakes.
  • Add Mushrooms, and sauté for a few minutes.
  • Toss in your fresh Spinach, and Coconut Aminos.
  • Season with Himalayan Salt and White Pepper. Sauté for a few more minutes, until Spinach is slightly wilted.

    Serve over your favorite rice or quinoa!
