Mandarin Endive Salad with Basil-infused Plums and Apricots

Endive leaves are easy to eat, and a perfect finger food or hors d’oeuvre. The bitterness of the Endive is balanced with the sweetness of fruit and nuts, with a tangy Balsamic.
It’s the perfect way to wake up your palate!
Ingredients
(2-3) Heads (2-3) Endive | separated into leaves
(1) cup (1) Fresh Apricots | cut into small cubes
(1) cup (1) Fresh Plums | cut into small cubes
(1) cup (1) Fresh Mandarin Oranges| cut into small cubes
(1) TABLESPOON (1) Fresh Basil and/or Mint | julienned

(1) CUP (1) Spicy Herbed Caramelized Nuts | chopped | please click HERE for my recipe | you can use any nuts here, and not necessarily use my recipe!
Let’s DO THIS!
- Prepare your dressing, and set aside.
Prepare nuts, and set aside.
Combine Oranges, Apricots, Plums and Basil and/or Mint in a bowl. - Arrange Endive leaves onto your plate or serving platter.
- Fill each leaf with your mixed fruit.
- Drizzle with dressing, and finish with nuts!
- Serve as a pupu (appetizer), an entrée, or as a salad course!
