Endive leaves are easy to eat, and a perfect finger food or hors d’oeuvre. The bitterness of the Endive is balanced with the sweetness of fruit and nuts, with a tangy Balsamic.

It’s the perfect way to wake up your palate!

Ingredients

  • (2-3) Heads (2-3) Endive | separated into leaves

  • (1) cup (1) Fresh Apricots | cut into small cubes

  • (1) cup (1) Fresh Plums | cut into small cubes

  • (1) cup (1) Fresh Mandarin Oranges| cut into small cubes

  • (1) TABLESPOON (1) Fresh Basil and/or Mint | julienned

  • ½ cup ½ Cherry Orange Balsamic | please click HERE for my recipe!

  • (1) CUP (1) Spicy Herbed Caramelized Nuts | chopped | please click HERE for my recipe | you can use any nuts here, and not necessarily use my recipe!

Let’s DO THIS!

  • Prepare your dressing, and set aside.
    Prepare nuts, and set aside.

    Combine Oranges, Apricots, Plums and Basil and/or Mint in a bowl.
  • Arrange Endive leaves onto your plate or serving platter.
  • Fill each leaf with your mixed fruit.
  • Drizzle with dressing, and finish with nuts!
  • Serve as a pupu (appetizer), an entrée, or as a salad course!
