A perfect one-skillet meal for summer!! Throw this on the BBQ or toaster oven for the dreamiest potatoes, EVER!

Ingredients

  • (1-2) TABLESPOONS (1-2) Avocado or Olive Oil

  • (2) (2) Yukon Gold Potatoes | washed and sliced into 1-inch rounds

  • (2) (2) Okinawan Sweet Potatoes | washed and sliced into 1-inch rounds

  • (1-2) teaspoons (1-2) Himalayan Salt

  • (1) teaspoon (1) Paprika

  • (1) tespoon (1) Chili Flakes (crushed Red Pepper)

  • (1) TABLESPOON (1) Fresh Thyme | stem removed, chopped

  • (1) TABLESPOON (1) Fresh Rosemary| stem removed, chopped

  • (2) CUPS (2) Vegetable Broth | please click HERE for my recipe!

  • (4) cloves (4) Garlic | chopped

  • Salt and Pepper to taste!

Let’s DO THIS!

  • Preheat oven to 375ºF.
  • In a mixing bowl, combine Potatoes, Oil, Salt, Paprika, Chili Flakes, Thyme and Rosemary.
  • On medium heat, sear potatoes in a skillet.
  • Sprinkle chopped Garlic over Potatoes, and pour in Vegetable Broth!
  • Throw in a couple of sprigs of Thyme and Rosemary, then bake for 35 minutes.
