Easy Sunbutter Granola (Nut-Free!)

(1) CUP (1) Coconut Oil
¼ cup ¼ Coconut Sugar | optional!
(1) teaspoon (1) Vanilla Extract
½ cup ½ Sunbutter (to keep this nut-free!) | you can use any nut butter like Almond, Peanut or Hazelnut
(6) CUPS (6) organic Rolled GF Oats
½ cup ½ Sunflower Seeds
½ cup ½ Pumpkin Seeds
½ cup ½ Dried Blueberries
½ cup ½ Dried Cherries
(1) CUP (1) Shredded Coconut
Let’s DO THIS!
- Preheat oven to 350°.
Line your baking dish with parchment paper. - In a saucepan, combine Coconut Oil, Sugar, Vanilla and Sun Butter. Stir in Gluten-Free Rolled Oats.
- Spread out onto your lined baking dish, and place in oven for 15 minutes, stirring at least once.
- Remove baking dish from the oven, and add the Sunflower and Pumpkin Seeds, Blueberries, Cherries and Coconut.
- Place back into the oven for 15 – 20 minutes, or until golden brown, stirring periodically (I usually do this every 5-8 minutes!).
- Place in bowls, glass jars, fresh Papaya or a Pineapple Boat!
Garnish with Coconut Whipped Cream, fresh Berries, your favorite fruits, sliced Figs, Hemp Hearts, toasted Coconut, plant-based milks, whatever!
NOTES
- This makes a great snack or an easy breakfast!
