Ingredients
(2-3) TABLESPOONS (2-3) Coconut Oil
(1) (1) Onion | julienned
(1) CUP (1) Red Bell Pepper | julienned
(1) CUP (1) Orange or Yellow Bell Pepper | julienned
(2) LARGE (2) Carrots | chopped or shredded
(1) TABLESPOON (1) FRESH Ginger | minced
(2-3) cloves (2-3) FRESH Garlic | smashed and minced
pinch pinch Salt
(1-2) TABLESPOON(S) (1-2) Curry Powder
½ teaspoon ½ Turmeric Powder
½ teaspoon ½ Garlic Powder | optional
½ teaspoon ½ Ginger Powder | optional
pinch pinch Garam Masala | optional
pinch pinch Ground Cardamom | optional
pinch pinch Ground Coriander | optional
(1) TABLESPOON (1) Sambal | optional
½ cup ½ Yellow or Red Heirloom Cherry Tomatoes | I usually cut mine in half
(2-4) CUPS (2-4) Filtered Water
(1) Can (1) Coconut Milk | full fat
(1-2) TABLESPOON(S) (1-2) Coconut Sugar or Agave | optional
Squeeze of Lime
¼ cup ¼ FRESH Basil | SOUP + garnish
¼ cup ¼ FRESH Cilantro | SOUP + garnish
½ cup ½ Green Onion | chopped for garnish
¼ cup ¼ FRESH Jalapeño | optional | sliced in rings
Let’s DO THIS!
- Heat (2) TABLESPOONS of Coconut Oil in a large pot, over medium-high heat.
- Add Onion, Bell Peppers, Carrots, Ginger, Garlic, and pinch of Salt. Sauté for a few minutes.
- Stir in Curry Powder, Turmeric, Garlic and Ginger Powders; Garam Masala, Cardamom, Coriander, and Sambal. Throw in Tomatoes, and sauté for a few more minutes.
- Deglaze the pot with (1) CUP of filtered Water, and stir. Add in (2) more CUPS of Water, bring to a boil, then turn down the heat. You may need more water. Simmer for 10-15 minutes.
NOTE: Try not to overcook your vegetables! - Stir in Coconut Milk (my favorite part!), Coconut Sugar, squeeze Lime, Basil, Cilantro, Green Onion and Jalapeño.
- Season with Salt and Pepper. Keep tasting!
- Simmer for (10-15) minutes or so.
- Serve this piping hot over Jasmine or Basmati Rice. Finish with FRESH Basil, Cilantro, and Green Onions!

- WHITE WINE: Riesling | Chenin Blanc
- RED WINE: Pinot Noir
