Cherry Orange Balsamic Vinaigrette

minutesHomemade dressings are really my thing. I eat a lot of salad, and store-bought dressings are great to have on hand, but you really can’t beat a nice dressing, fresh from the garden! This one is a real hit, and when cherries are in season, it’s a staple in our house!
Ingredients
(1) CUP (1) Avocado or Olive Oil
½ cup ½ Balsamic Vinegar
½ cup ½ fresh, pitted Cherries | I also LOVE these frozen, organic Cherries from Costco, dried Cherries will work, and THESE Bada Bing Cherries are awesome, too!
(2) Cloves (2) Garlic
(2) TABLESPOONS (2) Fresh Basil Leaves
(1) teaspoon (1) Agave
(1) TABLESPOON (1) Stoneground Mustard | Dijon works, and really, yellow mustard would be fine.
Juice from (1) Orange
(1) TABLESPOON (1) Orange Zest
Salt and Pepper to taste! | I don’t even add Salt, and maybe just a pinch of White Pepper.
Let’s DO THIS!
- Place ingredients in your blender, and pulse until combined!
- Toss this dressing with Spinach, or any greens, along with your favorite nuts, fruits and vegetables. I vote for Arugula, too! SO good.
WINE PAIRING
- WHITE WINE: Unoaked Chardonnay | Albariño | Reisling
- RED WINE: Rosé | Beaujolais | Oregon Pinot
- *BOOM!*
